Sausage Tortellini Soup
1 lb. hot Italian sausage, casing removed
1 cup chopped onions
2 garlic cloves, minced
6 cups beef broth
1 large (28oz) can diced tomatoes
1 T basil
1 t Italian spice
2 T parsley
1 (13oz) package frozen cheese tortellini
1. In a large soup pot or 6 quart Dutch oven, brown sausage.
2. Add onion and garlic, cook until tender
3. Stir in beef broth and spices. Bring to boil
4. Add tortellini. Cover and simmer for 1 hour (or longer, if you like)
That’s all there is to it. I like to sprinkle a little fresh grated parmigiana on top of each bowlful before serving.
